Outcome
Apply safe, advanced knife skills for a variety of purposes.
Indicators
(a) Explain the safety benefits of maintaining a sharp knife.
(b) Practise different knife sharpening techniques (e.g., strop, honing oil and sharpening board).
(c) Apply safe knife care techniques (e.g., drying and oiling) to maintain knives.
(d)

Describe the characteristics and purpose of different knives when processing game, such as:

  • gutting (e.g., removing organs);
  • boning (e.g., separating meat from bone);
  • skinner (e.g., cutting the skin without tearing); and,
  • filleting (e.g., cutting the meat from the fish).
(e)

Experiment with advanced knifecraft projects such as:

  • crafting a diamond willow walking stick or a try stick;
  • processing firewood and kindling;
  • carving a netting needle or willow whistle; and,
  • creating deadfall traps.
(f) Craft a sharpening board.
(g) Explore opportunities and skills required for knife safety certification (e.g., Scouts Canada).
